The clovers, hemp, indigo and peas not only feed the cattle, sheep, minder donkeys and bug devouring fowl, chickens and Guinea hens, but also fix and sequester soil nitrogen and nutrients, suppress weeds and build general soil health.  If an animal is in need of veterinarian attention and antibiotics are required it is pulled from the market cycle and placed in a carefully monitored Withdrawal Program for a minimum of six months.  After being cured, it is antibiotic and hormone free.  Festina Lente provides Natural Beef and Lamb.  Through cooperative partners we also supply swine and goats.  All animals are raised on natural and improved pasture and are only given federally mandated vaccinations at birth or weening. Here at Festina Lente every effort is taken to make the operation holistic and earth-sensitive and every person, animal and plant is integrated into the scheme.  As a minor example, the cattle rotational schedule is based on the fecal parasite lifespan of 21 days. Cattle are not reintroduced into a used pasture for a minimum of this period.  Not only do the parasites die but the grasses are given an opportunity to recover to a minimum six inch height before re-grazing.  Ducks, chickens and Guineas eat insects, weeds and recycled herd waste.  The herd itself breaks up and presses waste into the soil.  Occasionally sheep will be mixed with the cattle to browse grasses and plants the cattle do not eat and provide weed control and fertilization.  In addition to providing herd feed, the pasture plants themselves serve to add both biomass and nitrogen to the soil.  Bi-products of the olive grove and vineyard provide minerals, vitamins and oils to not only fatten livestock but additional estate products.

All animals are ethically hand raised, cage free, estate grown on free run rotational pastures.  They feed on mixed seeded natural and improved pastures planted in grasses, Bahia and Red River Crab Grass, legumes, cow peas, hairy indigo, white and red clover, and high protein, highly digestible Sunn Hemp.  Steers and stock not only gain weight naturally on this healthy green diet but also on the flowering grasses that provide the Omega-3 fats required for tender, marbled meat.
